Apple Cider Vinegar Pumpkin Vinaigrette

Natural apple cider vinegar is touted by many to have significant health benefits. Some are simply anecdotal, while others are backed by scientific research, A simple Google search will lead you to sites like this one. The bottom line: apple cider vinegar tastes great, may have health benefits, and is not likely to hurt you....

We have a small orchard with a variety of apple trees, and turn most of our apples into apple cider vinegar (ACV). It is a natural process of fermentation--and waiting--or the natural yeasts and the vinegar "mother" to do her thing, converting the the juice first into hard cider, then to vinegar. The wait time is usually about 6 months from fresh apple to ACV, but the end result is so worth it! When it is ready, we let the cloudy bits settle to the bottom of the container and put it directly into the clean bottles without heating it, since heat kills the natural probiotics in the vinegar.

ACV is my go-to vinegar for many salad dressings, where I want a crisp, tart, clean vinaigrette. Oftentimes, the ingredients are few, and I make the dressing right in the bottom of the salad bowl before adding the greens and embellishments. Truth be told, I have made it so many times I never measure, but taste it for balance after I have added the ingredients. Here's what I do: pour about 2-3Tbsp high quality olive oil into the bowl. Add about 1/4 tsp sea salt or flavored salt and stir it around to mix with the olive oil and coat the bowl. Crush 1-2 cloves of fresh garlic and stir it around with the olive oil and salt. Then splash in about 2 Tbsp Sweetlife Farm Apple Cider Vinegar, stir and taste. When it's how you like it, add your salad ingredients and toss just before serving. 

A tangy variation of the above is to substitute a teaspoon of dijon mustard for the salt.
