We source a bright, green arbequina olive oil pressed from California olives and give it some time in our smokehouse to acquire a seductively smoky flavor profile. A little goes a long way towards primping up a piece of fish, a steak or even scrambled eggs. A local caterer drizzles it over a presentation of whole salmon, which sends customers to us get some for themselves to take home.
The balsamic vinegars begin with a high quality California made balsamic vinegar, to which we add our own flavor infusions, including a blackberry reduction, rosemary and lavender, all sourced from our gardens. They are rich and savory, and add a welcome umame to a variety of dishes.
Our apple cider vinegar begins life as happy apples growing on Bainbridge trees. Most of them are our own trees, but we have found that there is added flavor complexity when apple varieties are mixed, so we welcome apples from the neighbors' trees, and our cider press gets a workout when neighbors gather to press the juice and enjoy Bob's homemade apple cider donuts hot out of the pan. Even the chickens benefit, since they get to gorge on apple pulp!
