For Roasting:
2 Cornish Game Hens (increase recipe size according to your needs or substitute chicken or other fowl)
2 Tbsp Dr. Bob's Wild Juniper Rub
1/4 cup hazelnut, corn or safflower oil

For Gravy:
1 cup chicken stock
1 1/2 Tbsp masa harina flour
1 tsp Dr. Bob's Wild Juniper Rub
1 tsp Dr. Bob's Hot Shot Grilling Rub
pan drippings, salt and pepper to taste

Cornish Hens withHot ShotRinse and pat the game hens dry
Sprinkle each hen with 1 Tbsp Juniper Rub
Cover and refrigerate for 2 hours or overnight

Preheat oven to 425 degrees
Place game hens into ovenproof dish, drizzle a little oil over the top and bake until done, about 45 minutes-1 hour, until internal temperature is 165 degrees
Baste occasionally with the oil to keep moist
Remove from oven and let rest for about 10 minutes

About 15 min before serving time make the gravy:
Stir masa and  spice mixes into chicken broth
Heat, stirring constantly, until simmering, and cook until slightly reduced and thickened, about 10 minutes. 
Spoon over the game hens and serve

 Excellent served over rice or mashed potatoes with a seaonal vegetable
Pair with Eleven Winery Chenin Blanc or Malbec wine
