One of the best things about Thanksgiving is cooking the biggest turkey that will fit in the oven, so there's plenty for turkey sandwiches later. Cranberry Jalapeno Jam takes this already perfect sandwich to new heights. Fresh-cooked cranberries, a pop of jalapeno and a few strawberries combine to make the perfect accompaniment to my daily post-holiday lunch...
Point of fact: this works equally well with leftover baked chicken, and it is NOT necessary to wait until the holidays to enjoy it!
Nancy's Post-Thanksgiving Turkey Sandwich 2 slices of chewy sourdough bread (make your own-homemade is the best!) a generous helping of cold sliced turkey mayo Cranberry Jalapeno Jam lettuce salt and pepper Tim's Cascade Potato Chips Slather one piece of bread with mayo and the other with a good dose of Bob's cranberry jalapeno jam. Pile on the sliced turkey and liberally salt and pepper it. Top with lettuce and enough of Tim's potato chips to notice when you bite into this baby. Yeah, weird, I know, but don't rule it out unless you've tried it. I don't let Tim's in the house much, because I can't eat just one; I prefer not to eat my turkey sandwich without them.
